A baked version is also available, with dry white wine. pan juices and butter added at the end, for a shinier surface and a richer seasoning. This preparation is known as Lombardy.

Prepare the pocket
Open the boneless brisket to create a regular pocket, without completely separating the meat. Trim the opening so it can accommodate the filling and be easily closed. The pocket should be large and intact, with no cuts that could allow the filling to escape. of the mixture during cooking.
Season the breadcrumbs
Melt the butter in a saucepan and lightly sauté the finely chopped parsley. Add the breadcrumbs and cook for a few minutes, stirring constantly. Stop cooking when the breadcrumbs are well-saturated with butter and have a fragrant aroma, but don't let them brown too much.
Complete the filling
Take off the saucepan from the heat and add the Parmigiano Reggiano grated cheese, eggs, milk, salt, pepper, and a sprinkling of nutmeg. Mix and knead carefully until smooth. a mixture homogeneous and compact, free from dry parts or obvious lumps.
Stuff and tie
Insert the stuffing into the veal pouch, distributing it without over-compressing the meat. Sew the opening all the way around, then tie the tip with twine in a cross. Prick the surface with a fork: the small holes will allow the heat to penetrate more evenly during cooking.
Prepare the broth
Bring to a boil Bring plenty of salted water to a large pot and add the celery, carrot, and onion. Bring the liquid to a steady, fragrant boil, then reduce the heat just enough to maintain a gentle, steady simmer.
Cook the tip
90 minSubmerge the stuffed tip in the aromatic broth, cover the pot, and cook slowly for about an hour and a half. Maintain a gentle simmer, avoiding any violent movements of the liquid. Cooking is complete when the meat is tender and the filling is well-firmed.
Let it cool down
