Goby Risotto
Risotto di Ghiozzi
Creamy and flavorful risotto, made with gobies cooked in vinegar and transformed into a rich sauce.
Goby risotto is a first course A bold fish dish, built on a concentrated and aromatic sauce. The preparation enhances the flavor of the small fish by cooking them in oil with garlic, salt, pepper, and white vinegar, a technique that gives the sauce a pungent and deep note. The Carnaroli rice, toasted before adding the sauce, gradually absorbs the liquid and achieves a soft consistency, maintaining a good grain structure. The final creaming with extra virgin olive oil completes the dish with a smoother and more enveloping texture, without overpowering the flavor of the fish. In Veneto, this recipe offers an unusual and flavorful risotto, based on the boreto alla Grado cooking method and a finely pureed sauce.
