Spaghetti with clams
Spaghetti alle vongole
Traditional recipe
Steamed clams cooked in their own sea aroma, with garlic, parsley, white wine, and oil: the purest and most direct seafood pasta in the Mediterranean.
Spaghetti with clams is the most beloved seafood dish in Neapolitan and Campanian cuisine, widespread along all Italian coasts. Simplicity is its strength: the flavor of the sea doesn't need to be hidden. There are two versions: 'in bianco' (without tomato, the oldest and considered the most authentic in Campania) and 'in rosso' (with cherry tomatoes). The white version brings out the clams' flavor to the fullest; the red one is sweeter and more colorful. True clams (Ruditapes decussatus) are the most prized for this dish: smaller than lupine clams but more flavorful. Purging in salted water for at least two hours eliminates any residual sand.

Select the clams
5 minCheck the shells and discard any cracked or open ones that don't close under pressure. Rinse the clams under cold water, scrubbing the surfaces to remove sand and crust. Make sure there are no fractured or unresponsive mollusks.
Purge the molluscs
180 minSoak the clams in very cold water with a handful of coarse salt per liter and refrigerate them for 2–3 hours. Change the water if it becomes very cloudy. Drain and rinse thoroughly: the resulting water should be free of any visible sand residue.
Open the clams

Filter the liquid
5 minCollect the liquid released by the clams and strain it through a fine sieve to remove any residual sand. Meanwhile, bring plenty of water for the pasta to a boil and add very little salt: the liquid from the clams will already provide much of the flavor.
Cook the pasta

Vigorously stir spaghetti
2 minTransfer the spaghetti with tongs into the shallow pan of the clams. Add a ladle of cooking water and a ladle of filtered liquid, then sauté over medium heat-high for 30–60 seconds. The sauce is ready when it appears glossy, fluid, and adheres to the pasta, without being dry.

Chef's Tips
Purging is essential: any residual sand will ruin the dish. Never skip it. The strained clam juice is full of salty sea flavor: use it all, don't waste even a drop. Spaghetti with clams waits for no one: it should be eaten immediately.
