Eggplant stuffed with rice with a stringy heart
Melanzane ripiene di riso con cuore filante
Eggplant crunchy filled with Carnaroli tomato and a stringy heart of scamorzaA rich first course, with a golden crust and a creamy interior.
The eggplant Stuffed with rice and a stringy center, these pasta dishes are a clever combination of Southern Italian peasant tradition and the typical risotto technique of the North. This dish was born from the need to use garden surpluses, transforming them into a unique and hearty dish: eggplant becomes a container, crust and memory of the territory, while the rice, here Carnaroli, brings structure and creaminess. tomato passata gives a fresh acidity, balanced by the sapidity of the Parmigiano Reggiano DOP and with a smoky character scamorza or of the caciocavallo, which melts into the heart, providing that stringy texture that makes the dish irresistible. In the kitchen, this recipe is an exercise in balance: the controlled frying of the shells maintains a slightly crunchy surface that resists gratinating, while the fried pulp inserted into the risotto yields soft and aromatic morsels. Toasting and browning the rice are fundamental technical steps to obtaining a mixture It remains firm yet creamy, suitable for shaping and gratinating without becoming sticky. Culturally, the recipe combines two souls of Italy: the rustic simplicity of the vegetable and cheese filling and the subtlety of the creamy rice. It's ideal for a Sunday lunch or a dinner where you want to impress, offering different tactile and flavorful sensations in a single bite: the crispy exterior, the richness of the tomato, and the stringy center trailing a thin trail of melted cheese. Made with quality ingredients, this dish embodies Italian cuisine's ability to transform the ordinary into the memorable.

Prepare the broth and the eggplant
Prepare (2.11 pt) 1 litre of light vegetable broth (carrot, celery, onion) and keep it warm in a thin stream. Wash the eggplant, remove the stalk and slice them lengthwise to obtain three 'shells' per fruit; with a sharp knife and a tablespoon Empty the pulp, leaving a 5–7 mm border to maintain the structure. Lightly salt the shells inside and let them sweat for 20–30 minutes in a colander; this step removes excess water. Rinse and dry with paper towels, so the frying oil won't splash and the shells will stay crispy.
Fry the pulp of the eggplant
Cut the hollowed-out pulp into regular cubes of approximately 1 cm (0.39 in). Heat plenty of seed oil to 170–180 °C (356°F) (if you don't have a thermometer: dip a small piece of bread in it; it should brown in 30–40 seconds). Fry the pulp in two or three batches, 4–6 minutes each, until golden and soft but not falling apart. Drain the eggplant on paper towels, remove the excess oil by pressing lightly with more paper, and set them aside for the filling.
Fry the shells eggplant
Season with salt to taste e pepe, ricordando che il formaggio darĂ sapiditĂ .
Quando sali le eggplant To make them 'sweat', use coarse salt and leave for 20–30 minutes, then rinse and dry very well: the residual water would prevent dry frying. Vigorously stir the risotto off the heat with a drizzle of olive oil quality extra virgin olive oil and (0.71 oz) 20 g of Parmigiano Reggiano to give shine and bind the mixture, without overdoing the salt. Finally, grill under a very hot grill for a few minutes: the cheese should bubble and turn a light golden brown, but not char.
