Chicken Galantine
Galantina di Pollo
Chicken galantine is a refined cold dish from the Marche region, stuffed with meats, cured meats, pistachios and Marsala, to be served cold in slices.
Chicken galantine is a cold dish from the Marche region: a substantial dish, designed to be served cold as a rich appetizer or as an interlude accompanied by a salad and pickles. The boneless bird becomes the casing of a compact and layered filling, in which the delicate flavor of the chicken meets the structure of the meat, the savory flavor of the cured meats, and the aromatic notes of the Marsala and the crunchiness of pistachios. The truffle, listed as optional, adds an intense aroma without altering the basic structure of the recipe. Slow cooking in water flavored with onion, celery, and carrot keeps the dish tender and consolidates its shape; subsequent cooling under weight allows for neat slices, with the filling well-packed. Galantine is traditionally finished with gelatin and salsa verde.

Debone the chicken
Carefully debone the chicken or capon (about 2.2 lb), reserving the breast meat. Do not tear the skin or outer flesh, as these will contain the stuffing and seal the cylinder. Once finished, lay the bird out on the work surface and check that the surface is sufficiently intact and even.
Marinate the meats
120 minCut the top round veal, pork loin, pickled tongue, mortadella, The prosciutto and the chicken breast. Collect everything in a container, pour the Marsala and let it marinate for about two hours. The meat should be evenly flavored by the wine, without being submerged in excessive liquid.
Prepare the mince
After marinating, finely chop the pork loin, the top round of veal, chicken breast, half of the pickled tongue and half of the prosciutto. Transfer the mixture in a bowl: the mince must be homogeneous and fine enough to be spread without breaking the outer meat.
Mix the filling
Add the eggs, salt, and pepper to the chopped mixture, then knead carefully until you obtain a uniform and cohesive filling. Work the mixture until the egg is evenly distributed and there are no dry areas or compact lumps. Adjust the seasoning carefully, considering the saltiness of the pickled tongue, ham, and basil. mortadella.
Prepare the strips
Cut into thin strips the remaining half of the corned tongue, of the prosciutto and of the mortadellaShell the pistachios, blanch them, and remove the outer skin; if using, dice the black truffle as well. Keep these ingredients separate so they can be evenly distributed among the layers.
Build the layers
Servi a fette
