Prepare the apples
Cut the apples into 1 cm (0.39 in) slices. Season in a bowl with cinnamon, sugar and lemon juice. Arrange in a baking pan (26-(11.02 in) 28 cm).
Prepare the crumble
In a bowl, put flour, raw cane sugar, salt, and the cold, diced butter. Using your fingers, quickly rub the mixture together until it forms irregular crumbs. It shouldn't become a uniform dough.
Cook and serve
30 minSpread the crumble over the apples. Bake at 180°C (356°F) for 30-35 minutes, until the topping is golden brown and the apples are soft and bubbly around the edges. Serve warm with vanilla ice cream.
Chef's Tips
The butter should be cold; warm butter forms a paste instead of crumbs. Don't make the crumble uniform; uneven crumbs provide a better texture. Crumble is versatile: it works with any seasonal fruit.
