Frog Soup
Zuppa di Rane
Frog soup in aromatic broth with vegetables and toasted bread: a warm and delicate traditional dish.
Frog soup is a rustic and substantial preparation, designed to enhance a delicate meat through cooking in broth enriched with vegetables, Swiss chard, herbs and a small amount of tomato pasteThe result is a balanced soup, with a fragrant and lightly colored liquid, to which the frog meat is added only at the end to preserve its tenderness. Toasted bread completes the dish with a drier, crispier texture, ready to absorb the broth without immediately losing its structure. The recipe is presented as a traditional preparation. The technique requires care, especially when removing the flesh: in addition to the legs, it is also possible to use the meat from the front legs, making each portion richer and more complete.

Prepare the frog necklace
Skewer the frogs trim and clean, washed and removed from the gall bladder with a kitchen twine Sturdy, forming a compact necklace. Arrange them so they stay together during cooking: this arrangement makes it easier to remove the frogs and allows their flavors to be transferred to the broth without losing any pieces.
Cook the frogs
20 minLower the frogs into boiling salted water and cook for 20 minutes. Maintain a steady, not excessively vigorous boil, until the flesh is cooked through and comes away from the bones more easily. After 20 minutes, carefully remove the frogs and transfer them to a colander to cool.
Chop the vegetables
Finely chop the onion, carrot, parsley, and basil leaves. Swiss chard and the chosen aromatic herbs. Reduce everything in a mixture Smooth, so the vegetables can flavor the broth without leaving large chunks in the soup. Prepare the mince while the frogs are cooling, so you can proceed without interruptions.
Enrich the broth
20 minAdd the chopped vegetables to the frog cooking broth and add a pinch of tomato pasteCover the pot and cook gently for at least 20 minutes, maintaining a light boil. The broth is ready when the vegetables have released their aroma and the liquid has a uniform, light pink color.
Flesh the frogs
Once the frogs are cool enough to handle, carefully remove the flesh from the legs and, if possible, salvage the muscle tissue from the front legs. Cut out small pieces of meat, discarding the bones and storing the flesh in a clean container. Work gently to avoid tearing the flesh apart.
Combine the meat
5 minAdd the meat drumsticks to the broth with the vegetables only during the last 5 minutes of cooking. Maintain a low heat and ensure the soup continues to simmer without boiling vigorously: the meat should heat through and absorb the flavor, remaining tender and easily identifiable in the liquid.
Prepare the bread
Serve the soup over slices of lightly toasted bread, or top with croutons dipped in butter while still warm. The bread should be dry and golden brown on top, with a firm enough texture to absorb some of the broth without falling apart immediately.
Serve the soup
Divide the bread into soup bowls and pour the piping hot frog soup over it, mixing in the vegetables and meat in equal parts. Serve immediately, while the broth is still steaming and the bread has begun to soften, maintaining the contrast between the crunchy and soft texture.
Chef's Tips
The editorial staff recommends carefully removing the meat from the legs and front legs, adding the meat only in the last five minutes to keep it tender and recognizable in the soup.
