Potato and Meat Roast
Rosticciata di Patate e Carne
Trentino-style roasted potatoes and strips of meat, bound together with a sauce made with white wine and broth.
Potato and meat rosticciata is a rustic and complete dish, perfect for lunch or dinner when you want a hearty, well-browned, and fragrant dish. Its strength lies in the combination of the tenderness of the veal or pork strips and the crispy surface of the potatoes, combined with a light sauce of white wine and broth. Cooking the two ingredients separately allows for the different consistencies to be preserved: the meat retains its juices, while the potatoes develop a deep browning without falling apart. Parsley adds a final herbaceous note and makes the dish fresher. This recipe is part of the traditional cuisine of the Trentino-Alto Adige.
