Piedmontese-style mixed fried food
Fritto misto alla piemontese
Traditional recipe
The great Piedmontese fried food table: brains, ribs, amaretti cookies fried, apples, semolina sweet — sweet and salty together.
The Piedmontese mixed fry is one of the most extraordinary and bizarre dishes of Italian cuisine: it combines in the same dish savoury preparations (brains, ribs) and sweet ones (amaretti cookies (fried foods, apples). This sweet-savory combination is a legacy of Piedmontese Renaissance cuisine. Traditional Piedmontese restaurants still serve it as a Sunday dish. Frying in clarified butter distinguishes this fried dish from all other Italian dishes.

Preparation and blanching
Remove the skin from the brains, rinse them and immerse them in cold, lightly salted water with bay leaf; blanch 8–10 minutes until the meat appears firm and whitish. Cool immediately in ice water to stop the cooking. Slice the semolina (about (0.39 in) 1 cm) and slice the apples; dry each piece carefully.
Breading and frying
Pass by semolina, apples, ribs and brains in the beaten egg and then in the breadcrumbs, pressing to compact. Heat the clarified butter to 170–175°C (347°F). Fry the ribs and brains for 3–4 minutes per side until deep golden brown; then semolina and apples 2–3 min per side. Fry the amaretti cookies a few seconds until they heat up and swell slightly.
Draining, salting and serving
Drain on paper towels And salt Only when hot to avoid compromising the crispiness. Keep the ribs in the oven at 80°C (176°F) on a rack to maintain their temperature. Arrange the meat alternately, semolina, apple and amaretti cookies and serve immediately to preserve the contrast between the soft inside and the crunchy crust.
Chef's Tips
The brains must be very fresh. Clarified butter is essential. The alternation of sweet and savory is the hallmark: don't separate the preparations.
