Dry Ravioli
Ravioli Asciutti
Traditional fresh pasta ravioli filled with stewed meat, served layered with tomato sauce and parmesan.
Dry ravioli are a first course Rich, designed for an important table and for moments when fresh pasta meets a filling with an intense structure. The thin pastry encloses long-stewed beef, made aromatic by the lardo, garlic, herbs, and wine; the result is a balance of softness, flavor, and deep aromas. The sauce accompanies the filling without covering it: the cooking juices are mixed with the tomato sauce and distributed between the layers, along with the grated cheese. Cooking the ravioli in boiling water and carefully draining them preserves the integrity of the pasta, while serving them in a soup tureen enhances the firm consistency of the filling and the creaminess of the sauce. This recipe is considered a traditional dish.

Prepare the meat
Stab the beef with the lardo Cut into fillets and remove the garlic sprouts. Lightly flour the piece and brown it gently in oil in a saucepan, adding the carrot and the bunch of bay leaf, rosemary, and sage. Continue until the surface is evenly golden and the bottom releases an aromatic scent.
Cook the stew
180 minPour alternately a glass of wine and a ladle of broth, until the meat is covered in a thin stream. Salt, cover the saucepan Cook for about three hours, maintaining a gentle simmer. Turn the meat during cooking and add more broth when the liquid begins to dry out: at the end of cooking, the meat should be tender and easily removable.
Mince the meat
Remove the meat from the saucepan and let it cool. Put it through the mincer until you get a mixture Finely and evenly, repeating the process if necessary. Reserve some of the chopped ingredients and cooking liquid for the dressing. The filling should be smooth, free of stringy or chunky pieces.
Prepare the filling
Add the three eggs and the minced meat to the grana cheese grated. Mix until you get a slightly creamy but firm consistency, adding a few spoonfuls of the stew juice to adjust the moisture. Let it rest. the mixture, then bring him back to life over low heat in melted butter in skillet, without letting it dry out too much.
Roll out the pasta sheet
Mix the flour, five eggs, and salt until smooth. Roll out the dough very thinly, cutting strips about ten centimeters wide. The dough should be elastic and uniform, thin enough to cook quickly but sturdy enough to hold the filling.
Shape the ravioli
Cuoci i ravioli
Bring to a boil abbondante acqua salata e cuoci i ravioli.
Condisci a strati
Chef's Tips
