Cheese Gnocchi
Gnocchi al Formaggio
Trentino gnocchi of day-old bread and cheese, cooked in salted water and served hot with melted butter and cheese.
Cheese gnocchi are a rustic and hearty dish, perfect for a hot lunch when you want to bring a soft and flavorful dish to the table. The base of day-old bread transformed into dough enhances a compact but tender consistency, while the cheese contributes to the structure and a full flavor. Milk and eggs make the mixture more cohesive and delicate; the flour supports the mixture without weighing it down. Cooking in salted water allows the gnocchi to firm up gradually, maintaining a soft center and a uniform surface. Serve with melted butter and Parmigiano Reggiano It adds creaminess and flavor, while the local graukäse enhances its dairy character. This recipe is considered a traditional Trentino dish.
