Arancini al burro
Street food
Arancini Palermitans stuffed with cooked ham and mozzarella, the more delicate 'butter' variant of the classic ragĂą.
The arancini with butter (actually ham and mozzarella, but called 'with butter' because originally the filling was simply butter and cheese) are the sweet and delicate variant of the arancini Sicilians. In Palermo this version is almost more popular than the one in ragĂąThe rice is seasoned with a light saffron, the filling is cooked ham and stringy mozzarella. They are one of the most beloved Sicilian street food specialties, replicated around the world.

Cook the rice
25 minCook the rice in hot broth like a risotto, adding the saffron halfway through cooking. The rice should be dry when cooked. Add Parmigiano Reggiano and 2 beaten eggs. Spread on a baking pan to cool completely.
Form the arancini
With wet hands, take a portion of rice (80-(3.17 oz) 90 g). Flatten it in your palm. Place the ham and mozzarella in the center. Close it up to form a compact sphere. Coat with beaten egg, then breadcrumbs.
Fry and serve
5 minFry in oil at 175°C (347°F) for 4-5 minutes until evenly golden. Drain. Serve hot: the mozzarella inside should be stringy.
Chef's Tips
The rice must be completely cold before forming the arancini: when hot it sticks. The mozzarella must be well drained: the humidity makes the arancini soft.
