Vr’detto Pasquale
Roasted lamb with wild fennel mountain cheese and eggs, for a tasty and rustic Abruzzese dish.

The meat, first browned over high heat, develops a golden surface and concentrates its juices; wild fennel It adds a vegetal and aromatic note, while the eggs bind the base and complete the dish's texture. The prolonged, moderate oven cooking allows the ingredients to gradually blend without losing the lamb's character. The result is a compact yet juicy dish, with tender chunks and a base enriched by the oil from the browning. The editorial team places this dish in the culinary tradition of Abruzzo.
