Lemon Rosolio
Rosolio al Limone
Traditional lemon rosolio, prepared with citrus peel, alcohol and sugar syrup, then left to mature in the bottle.
Lemon rosolio is a homemade liqueur with a sweet, citrusy flavor, designed to conclude a meal or accompany a social occasion. Its success depends on the careful extraction of the aromatic oils present in the colored part of the lemon peel and the balance between the alcohol and the sugar syrup. The result should be fragrant, clear, and smooth on the palate, with a recognizable lemon note that isn't overpowered by the alcohol. Preparation requires few ingredients and no complex cooking: the key technique is infusion, followed by the addition of the cooled syrup, filtering, and a resting period. This rosolio stands out for its simplicity of preparation and the intense character obtained from the zest of preferably unripe lemons.

Prepare the peels
Wash and dry the lemons carefully, then remove only the thin, colorful layer of peel, avoiding as much of the white pith as possible. Use unripe lemons: the peel should be intact and fragrant, with no moist residue that could dilute the alcohol or compromise the infusion.
Start the alcoholic infusion
4320 minPlace the peels in a clean bottle and add 95% alcohol. Close the container and let it sit for three days, so that the alcohol can extract the peel's aromas. During this time, gently shake the bottle occasionally; the infusion is ready when the liquid has a distinct lemon scent.
Prepare the syrup
Pour 30 centiliters of water into a shallow pan Add the sugar. Heat, stirring, until the syrup becomes clear and smooth, leaving no crystals on the bottom. Keep the mixture simmering gently: you don't need to add color or bring to a boil, just ensure the sugar has completely dissolved.
Cool the syrup
Remove the syrup from the heat and let it cool completely. Wait until it loses all visible heat and the liquid returns to room temperature before adding it to the alcohol: this step better preserves the citrus aroma and prevents the heat from altering the flavor of the infusion.
Combine the liquids
Pour the cooled syrup into the bottle containing the flavored alcohol. Close the bottle and shake gently to combine the two liquids. The mixture It should appear smooth and fragrant; if the syrup has been cooled properly, it should not develop heat or lose its fresh lemon note.
Filter the rosolio
Strain the liqueur through a fine sieve or a suitable filter to completely remove the peel and any residue. Proceed slowly to obtain a clear, uniform liquid. When finished, the rosolio should be free of visible fragments and have a distinct aroma of lemon zest.
Let it mature in the bottle
28800 minTransfer the filtered rosolio to a clean bottle and seal it tightly. Let it mature for twenty days, unopened, so that the alcohol, the sweetness of the syrup, and the citrus aroma reach a harmonious balance. After this rest, the liqueur will be ready to enjoy.
Chef's Tips
Let the rosolio mature in the hermetically sealed bottle for the entire twenty days indicated, so that the aroma of the peels harmonizes with the syrup before serving.
