Pasta e fagioli with mussels
Pasta e Fagioli con le Cozze
Homemade tagliatelle, borlotti beans, and mussels in a brothy, flavorful, and parsley-flavored sauce.
Pasta e fagioli with mussels is a first course hearty, built on the encounter between the enveloping texture of legumes and the marine flavor of shellfish. The fresh pasta cut into diamond shapes gives the dish a rustic chewiness, while the base made with cherry tomatoes, oil, garlic and chili pepper maintains a brothy component ideal for binding together each element. The beans add body and softness; the mussels, together with their filtered liquid, give depth and flavor. Cooking the different components separately allows for the preservation of their textures and aromas, while the final step in saucepan harmonizes the preparation. The recipe is suitable for a complete lunch or dinner, served piping hot. The dish is associated with the culinary tradition of Puglia, as indicated for this preparation.
