Prepare the vegetables
Choose small, regular vegetables: potatoes a little bigger than a walnut, bell peppers about four centimetres, long and narrow Tropea red onions, zucchini long tomatoes cut into four-centimeter pieces and round tomatoes about four centimeters in size. Plan on an average of ten pieces per person, adding plenty of onions.
Empty the onions
Peel the onions and carefully scoop them out, without breaking the outer layers. Finely chop the inner parts and set them aside; you'll need them to make the tomato sauce base. Finish peeling them out when the casings are hollow but still intact and sturdy enough to hold the filling.
Empty the other vegetables
Clean the bell peppers removing the seeds and internal filaments; also empty the potatoes. Cut the zucchini Cut the tomatoes into four-centimeter pieces and scoop out the center, leaving sufficiently thick walls. Finally, prepare the tomatoes, carefully opening and emptying them, so as to obtain intact containers for the filling.
Prepare the filling
Soak it up soft bread crumb in water, then squeeze it well. Combine the minced veal, minced pork, soft bread crumb, The pecorino grated and chopped parsley; add salt and pepper. Knead until you obtain a mixture homogeneous and compact, with the typical consistency of meatball mixture.
Fill the vegetables
Spread the filling inside the onions, bell peppers, potatoes, zucchini and tomatoes. Pack the filling without over-pressing it, leaving the casings intact. Finish filling when each vegetable is full and the filling remains stable inside without spilling over the edges.
Fry them zucchini
5 minFlour them zucchini Stuffed and fry them in hot oil for five minutes. Carefully turn them over to brown the surface evenly: they should be lightly browned and still firm in texture, as they'll finish cooking in the oven.
Fry the other vegetables
Fry the onions, potatoes and bell peppers ripieni in olio bollente. Scolali quando risultano leggermente dorati all'esterno e ancora integri.
Cuoci in forno
