Crispy Chicken Bites
Bocconcini di pollo croccanti
Second course
Panko-breaded chicken breast cubes, fried or baked: crispy on the outside, juicy on the inside. Served with yogurt sauce.
Crispy Chicken Bites are the homemade version of chicken nuggets, but infinitely superior. The secret is panko—a coarse, dry Japanese breadcrumb—which provides an extraordinary crunch. The chicken breast, cut into large cubes (4-(1.97 in) 5 cm), remains juicy on the inside while the breading becomes golden and crispy. The marinade in buttermilk (or yogurt) for 30 minutes tenderizes the meat fibers. With yogurt and garlic sauce, it's irresistible.

Chef's Tips
Japanese panko adds a crispier texture than regular breadcrumbs; look for it at the supermarket. The yogurt marinade tenderizes the chicken; don't skip it.
