Easter Lamb
Agnello di Pasqua
Roasted lamb with peas and egg garnish, pecorino and parsley.
Easter lamb is a traditional preparation with a strong character, designed for the festive lunch and built on the combination of browned meat, the sweetness of fresh peas and the flavour of pecorino. Cooking in the earthenware pot, after being blended with dry white wine, maintains the aromatic, concentrated flavour and accompanies the meat to a tender consistency. The egg, cheese, and parsley finish adds a soft, enveloping component: when heated, it thickens and binds with the juices of the preparation, without turning into a liquid sauce. The result is a main course substantial, balanced between herbaceous aromas, flavours and different consistencies, to be served when the mixture of egg has reached the right compactness.
