Scalette
Traditional fried spiral-shaped sweets, golden brown and finished with melted honey.
Scalette are traditional fried sweets, recognizable by their spiral shape, reminiscent of a small ladder. The soft yet firm dough combines the texture of eggs and flour with the roundness of butter, the aromatic note of anise liqueur, and a hint of vanilla from the yeast. Frying makes the outside golden and gives it a firm texture, while melted honey adds a glossy, sweet, and fragrant finish. Their regular shape is essential: the cylinders must maintain a uniform thickness and adhere to the stick without deforming. They are associated with Christmas sweets and served as a festive treat, with a balance of fried fragrance, anise flavor, and honey sweetness.

Form the cylinders

Spiral Wrap
Wrap one cylinder at a time around the stick, forming a regular spiral. Gently remove it without squashing it and place it on a clean kitchen towel floured; proceed in the same way until you run out of dough.
