Prepare the horseradish
Peel the horseradish root and grate it finely. Collect it in a bowl, working it evenly to obtain a fine, homogeneous pulp, without large fragments. This consistency allows the horseradish to distribute throughout the heavy cream and to regularly release its characteristic pungent flavour.

Add the seasonings
Join the whipped cream grated horseradish, sugar, mustard, and lemon juice. Adjust the quantities according to the desired intensity, proceeding gradually: the mixture It must be creamy, fragrant and harmonious, with the spicy horseradish supported by the acidic note of lemon and mustard.
Mix gently
Incorporate the ingredients with slow movements from the bottom up, so as not to deflate the heavy creamProcess until the sauce is smooth, with no white streaks or lumps of horseradish. Taste and adjust the seasoning if necessary by adding mustard, lemon, or horseradish sparingly.
Serve with boiled meat
Transfer the sauce to a bowl and serve it as an accompaniment to the boiled meat. Keep the creamy consistency and spread it alongside the meat, so its pungent flavor can balance the delicate flavor of the dish.
