Thyme and rosemary lend fresh, lingering herbaceous notes; unpeeled garlic adds depth with a more rounded, less pungent aroma than peeled garlic. Lemon juice rounds out the dish with a citrusy note, balancing the fatty component of the pan juicesThe result is a juicy, fragrant chicken accompanied by a natural sauce obtained directly in skillet, suitable for a lunch or dinner without elaborate preparations.

Sear the chicken
12 minSeason with salt and pepper the chicken breasts. Heat a drizzle of olive oil in one skillet capacious over medium heat-high, then cook the meat for 5-6 minutes per side, until it is golden brown on the outside and almost cooked through in the center.
Flavor with basting
3 minLower the heat to medium and add butter, unpeeled garlic, rosemary and thyme. When the butter foams, tilt the skillet and continuously baste the breasts with the flavoured stock for 2-3 minutes, keeping the meat juicy.
Let it rest and serve
5 minTurn off the heat and let the chicken rest for 3-5 minutes, so that the juices redistribute throughout the meat. Serve with pan juices poured over and complete with a drop of lemon juice.
