Cutting into squares serves a specific purpose, allowing the seasoning to penetrate deeply and better distribute the heat within the meat. eggplantExtra virgin olive oil is the basis of thepan sauce, enriched by the scent of parsley, the intense presence of garlic, the lively character of chili pepper and the saltiness of the salt. Served hot or warm, they offer a pleasant contrast between the tender flesh and the shape-retaining skin. This preparation is considered a characteristic of the culinary tradition.
