Lasagna Bolognese
Lasagne alla Bolognese
Baked puff pastry, ragù and béchamel sauce
The symbol of the Emilian Sunday: golden layers of egg puff pastry, ragù slow and creamy béchamel, oven-baked to perfection.
Lasagna is one of Italy's oldest dishes, mentioned in medieval texts. The Bolognese version, with green pasta, ragù of meat and béchamel sauce became established in the twentieth century, becoming the quintessential festive dish. In Bologna, ragù authentic includes mixed beef and pork, soffritto Slow cooking, white wine, and a little milk—not a lot of tomato. The recipe registered with the Bologna Chamber of Commerce in 1982 is the official version. Outside Italy, lasagna is often simplified, but in its original form, it remains a dish that requires time and care—a uniquely Emilian philosophy.
