Battered Mussels
Cozze in Pastella
Shelled mussels coated in beer batter, fried until golden and crispy.
Battered mussels are a crispy, inviting fried dish best served piping hot when the coating is at its crispiest. The tender mollusk flesh is encased in a light, golden, and irregular shell, with the savory flavor of the mussels balanced by the delicate egg and flour. Cold beer contributes to a smooth, well-coated batter, designed to coat the mollusk without weighing it down. Deep-frying in oil completes the dish with a dry, crispy surface, while the inside remains soft. This recipe is considered a traditional Italian dish.
