Cut a cross into the surface, cover it with about a centimeter of flour, and let it rest in a cool place for at least eight hours, until it has risen well and the surface appears raised.
Complete the second leavening
240 minTake the risen dough and knead it, incorporating the remaining flour and milk. Shape it into a loaf again, cut a cross, cover it with flour, and let it rest in a cool place for another four hours. Continue kneading when the dough has gained volume and feels softer and more airy to the touch.
Enrich the dough
Melt the butter and let it cool, then add it to the mixture together with the sugar, Marsala dry, grated zest of half a lemon, a pinch of salt, and the eggs. Mix thoroughly until the mixture is smooth, soft, and free of streaks of butter or unmixed ingredients.
Prepare the fruit
Let it softenraisins in warm water, then drain thoroughly. Keep it ready along with the pine nuts for the filling, so that both can be distributed in even layers without releasing water into the dough.
Form the layers
Divide the dough into four parts and roll them out to about a centimeter thick. Butter a loaf pan. colomba and cover it with a slightly larger portion, leaving enough dough to close the edges. Spread a portion of sweet savòr, distribute a third of raisins and pine nuts, then cover with another layer of pasta.
Complete the filling
