Clean and cut
Clean up zucchini, eggplant, bell peppers and potatoes, then dice them into as uniform a cube as possible. This will ensure more even cooking and each vegetable will retain a distinctive texture. Also prepare the onion by thinly slicing it and keeping the prepared ingredients separate for the next steps.
Fry the vegetables
Fry the separately zucchini, the eggplant, i bell peppers and the potatoes already cut. Drain them when they are cooked and slightly golden on the surface, avoiding frying them longer than necessary: they will have to finish cooking in the saucepan without falling apart.
Prepare the soffritto
Pour the extra virgin olive oil into a saucepan and add it clove of garlic and the sliced onion. Gently sauté over medium heat until the onion becomes soft and golden and the garlic releases its aroma, without letting it darken, because too intense a color would make the sauce bitter.
Cook the tomatoes
5 minJoin the canned whole peeled tomatoes to the soffritto and cook for about five minutes. Maintain a medium heat and wait until the tomato begins to simmer and blends with the oil and onion, forming a smooth sauce before adding the fried vegetables.
Combine the vegetables
Add to the tomato bell peppers, the eggplant, the zucchini and the previously fried potatoes. Stir gently to distribute the seasoning without breaking the cubes, then season with salt and pepper. The mixture should be well combined and evenly coated with the sauce.
Smell and cook
30 minCombine basil, oregano and parsley, then cover the saucepanCook for about thirty minutes. over medium heat, allowing the vegetables to absorb the flavor and become tender. Check for doneness by observing a soft but still recognizable consistency and a gentle, steady simmer in the sauce.
Make it shrink
When cooking is almost finished, remove the lid and raise the heatLet the excess moisture evaporate until the sauce appears more concentrated and enveloping, stirring carefully to prevent the vegetables from sticking. Turn off the heat when the sauce is no longer watery.
Serve warm
Let the cianfotta rest briefly off the heat, then serve it warm. This temperature allows the tomatoes and herbs to be fully appreciated and allows the vegetables to retain their texture, without losing the balance achieved during cooking.
