Cauliflower Fanese Style
Cavolfiore alla Fanese
Cauliflower florets al dente seasoned with anchovies, extra virgin olive oil, salt and pepper.
Cauliflower Fanese-style is a simple and flavorful dish, perfect as a side dish or a cold dish to bring to the table when you want to highlight the cauliflower with a bold yet simple sauce. Texture is key: cooking should leave the florets tender, yet firm enough not to fall apart when seasoned. The anchovies, gently heated in extra virgin olive oil, become a fluid and fragrant sauce that envelops the vegetable, while black pepper adds an aromatic note and salt completes the balance. The result is a savory dish with a soft yet distinctive texture. Cauliflower Fanese-style is rooted in the culinary tradition of the Marche.

Clean the cauliflower
Trim and clean Thoroughly clean the cauliflower, removing the core, outer leaves, and any damaged florets. Rinse the vegetable under running water and drain well. Finish this step when the cauliflower is free of debris and ready to be immersed in the cooking water.
Boil the cauliflower
10 minBring to a boil Add plenty of water and a pinch of salt. Add the whole cauliflower and boil it for about 10 minutes, checking with a fork to see if it's cooked through: it should be tender but still firm, so al dente and not undone.
Let the vegetable cool
Drain the cauliflower carefully, allowing the cooking water to drain away, then let it cool. Allow it to release excess heat before separating it: this way, the florets will remain more compact and can be seasoned without breaking.
Prepare the sauce
Pour the extra virgin olive oil into a skillet and add the anchovy fillets. Heat them slightly. over low heat, without burning the oil, until they begin to melt, forming a smooth, fragrant sauce. Avoid over-browning: the anchovies should blend delicately with the sauce.
Divide into florets
Separate the cooled cauliflower into evenly sized florets and transfer them to a salad bowl. Proceed gently to maintain the vegetable's structure: the florets should be whole, tender, and easy to season evenly.
Season and serve
Pour the warm anchovy sauce over the florets and toss gently. Season with salt sparingly, add a pinch of freshly ground black pepper, and stir in the extra virgin olive oil. Toss again until the sauce is evenly distributed without breaking the cauliflower, then serve.
