Dissolve the starch
Pour into a shallow pan Add a small amount of whole milk and the wheat starch. Stir thoroughly until you obtain a smooth, uniform mixture, free of lumps. This step helps the cream thicken evenly during cooking.
Combine milk and sugar
Add to shallow pan the remaining milk and the sugar. Mix with a wooden spoon until the sugar has completely dissolved and the mixture is the mixture homogeneous, still fluid and free from deposits on the bottom.
It smells like lemon
Enter into the mixture the zest of one lemon, preferably well-distributed throughout the liquid. Let it flavor the cream while cooking, without adding the juice: the aroma should be fresh and delicate, not pungent.
Cook over low heat
Put the shallow pan on the heat over low heat and mix continuously with the wooden spoon. Keep the mixture stirring constantly to prevent it from sticking to the bottom and not bringing it to the boil: the cream should thicken gradually, without forming lively bubbles.
Check the consistency
Continue cooking until the cream becomes thick and velvety. Make sure it slides off the spoon smoothly and evenly, without lumps or signs of boiling. When it reaches this consistency, turn off the heat and remove the lemon peels.
Pour into the cups
Moisten a mold or 3-4 small cups and immediately pour in the still-hot cream. Spread it evenly, smoothing the surface if necessary, so the blancmange can cool at a uniform thickness.
Cool in the refrigerator
Let the blancmange cool briefly, then transfer it to the refrigerator. Let it cool completely until it reaches a firm yet creamy consistency, suitable for serving directly in the cups or unmolded.
