Agnolotti by Paularo
Agnolotti di Paularo
Agnolotti filled with cookies, fruit, cocoa and chocolate, served hot with smoked ricotta, hazelnut butter and cinnamon.
The agnolotti Paularo is a stuffed pasta preparation with an unusual character, designed to combine sweet, aromatic and savory notes in a single dish. In Friuli-Venezia Giulia, the pastry encloses a soft and compact filling built on cookies, dried fruit, candied fruit, jam, cocoa and chocolate, enlivened by rum and citrus zest. Parsley and butter add a rounded, herbaceous component, while the final seasoning introduces the bold flavour of the smoked ricotta and the warm scent of cinnamon. Cooking in boiling water keeps the ravioli whole and tender; the brown butter completes the dish with a toasted, enveloping note. The result is a warm dish, rich in contrasts and characterized by a soft yet well-defined texture.
