Strucolo De Pomi (Apple Strudel)
Strucolo De Pomi (strudel di Mele)
Apple strudel is a thin pastry roll with apples, raisins, dried fruit, cinnamon and toasted breadcrumbs.
Apple strudel is a traditional Trentino baked dessert, made with a thin, elastic pastry dough that envelops a filling rich in apples, dried fruit, and spicy aromas. The result combines the softness of the fruit, the sweetness of the cinnamon-infused sugar, and the fragrant notes of breadcrumbs toasted in butter. Raisins Soaked in rum, pine nuts and walnuts add texture variety, while lemon juice preserves the freshness of the apples. The distinctive technique involves prolonged kneading of the dough, followed by a very thin rolling out and brushing with butter, which promotes a layered structure during baking. Baking completes the dessert with a golden, crispy surface, leaving a moist and fragrant center.

Prepare the dough
30 minArrange the flour in a fountain shape and pour 15 cl of warm water (5.07 fl oz) into the center, along with the egg yolk, oil, and salt. Knead until the dough comes together. a mixture homogeneous, then work it vigorously for over 30 minutes, beating it several times on the cutting boardThe dough should become elastic, smooth, and resistant to finger pressure.
Let the dough rest
60 minShape into a ball, cover, and let it rest at room temperature for about an hour. Resting relaxes the dough's structure and makes it easier to roll out; the surface should be soft and not taut. The editors also note the traditional use of a heated pot as a cover.
Soak it upraisins
Wash the thoroughlyraisinsDrain it and transfer it to a bowl with the rum. Let it soften while you prepare the other filling ingredients. Before using, drain it well so that the moisture doesn't compromise the texture of the pastry or make the filling excessively runny.
Prepare the apples
Peel the apples, cut them in half, and remove the cores with a melon baller. Gradually dip the halves in the lemon juice, collecting them in a bowl: the acidity limits oxidation and keeps the pulp pale. The apples are ready when they are protected by the juice without being submerged in excess liquid.
Toast the breadcrumbs
Funds (7.05 oz) 200 g butter in skillet Add the breadcrumbs. Toast over medium heat, stirring, until golden brown and fragrant. Avoid browning too much: the breadcrumbs should help absorb the apple juice without introducing bitter notes.
Flavor the sugar
Roll out the pasta sheet
Infarina uniformemente uno strofinaccio molto grande e adagialvi l'impasto.
Cuoci in forno
