Horseradish Sauce with Vinegar
Salsa di Rafano All’aceto
A Trentino sauce with a pungent flavour, made with horseradish, breadcrumbs, vinegar and English mustard.
Horseradish vinegar sauce is a bold condiment, designed to complement dishes with a pungent, acidic, and aromatic note. Horseradish root is the heart of the flavor, while breadcrumbs contribute to the sauce's body and make it thicker and creamier. Vinegar regulates the consistency and balances the horseradish's strength; sugar, listed as optional, can tone down its more aggressive flavor without altering its character. English mustard completes the profile with an additional spicy nuance. This recipe is a traditional Trentino dish. Resting for a few hours before serving is an important part of the preparation, as it allows the flavors to meld and the sauce to stabilize in consistency.
