Chestnut Panzarottini
Panzarottini di Castagnaccio
Fried panzarottini, filled with cocoa chestnuts and flavoured with lemon, honey and powdered sugar.
Castagnaccio panzarottini are fried sweets made with thin pastry, designed to enclose a dense and aromatic chestnut filling. The filling, enriched with bitter cocoa, sugar, cinnamon, strong coffee, Strega liqueur, and lemon zest, offers a balance of intense notes, sweetness, and citrusy aroma. The outer pastry, made with flour and egg, must be firm and thin enough to cook quickly in oil, forming a golden and crispy surface. Honey, added while hot, creates a glossy and enveloping finish, while the powdered sugar completes the visual and taste contrast. The recipe belongs to the Italian gastronomic tradition and is suitable to be served as a dessert afternoon snack or at the end of a meal, when the fragrance of the frying and the softness of the filling can be best appreciated.

Boil the chestnuts
Boil the chestnuts in plenty of water with the sprig of rosemary and a little salt. Continue until they are soft and easily pierced by a knife; drain them while still warm, so the peel is easier to remove.

Seal the edges
Brush the edges of the triangles with theegg white and close them carefully, pressing with your fingers or the pastry wheel. Make sure there are no gaps: the seal must be continuous and tight to prevent the filling from leaking into the oil.

Frost and decorate
Melt the honey and spread it over the still-warm panzarotti, so it sticks better to the surface. Finish with a sprinkling of powdered sugar and serve when the topping is still shiny and the pasta retains its fragrance.
