Clean the mussels
Carefully scrape the mussel shells, removing any external impurities, and rinse them several times under running water. Clean until the surface is smooth and free of visible residue: this step prepares the mollusks for cooking and limits the presence of sand in the final liquid.
Prepare the pot
Transfer the mussels to a large pot and add the onion, parsley, thyme, bay leaf, dry white wine and a few peppercorns. Exclude the oil and saffron for now, which will be added during the reduction phase. pan juices.
Open the mussels
Sauté the mussels over high heatStirring carefully, until the shells open. The intense heat should quickly release the molluscs' liquid; consider cooking complete when the shells are open and the aroma is marine and aromatic. Remove the pan from the heat immediately.
Filter the liquid
Strain the cooking liquid carefully and transfer it to a small shallow panProceed slowly to remove any residue from the bottom and obtain a clearer base. Set the mussels aside while you prepare the sauce, without prolonging their heat unnecessarily.
Reduce the sauce
Add the extra virgin olive oil and saffron to the filtered liquid. Bring the shallow pan on the heat and let the mixture reduce until it reaches about a third of its initial volume, or a two-thirds reduction. The sauce should be more concentrated, fragrant, and slightly thicker.
Remove empty valves
Remove the empty shells from the mussels, keeping only the shells containing the molluscs. Arrange the mussels neatly on the serving dish to facilitate the distribution of the sauce and maintain a clean presentation.
Season and serve
Pour the reduced cooking liquid over the mussels and serve piping hot. Spread the sauce evenly, allowing it to soak into the mussels and collect in the shells. Serve immediately, while the saffron and herb aromas are still evident.
